On a recent trip to Erewhon, an AMAZING health food store in the heart of LA, I discovered a super healthy, yummy snackin’ treat called “Better Than Roasted” Almonds. What makes these nuts so delicious and nutritious is that they are sprouted. Sprouted and dehydrated nuts and seeds are easier to digest because the process reduces the amount of phytates in the nuts – phytates are part of the make-up of raw almonds and have been found to inhibit digestion. Better Than Roasted maximizes the bioavailability of essential vitamins, minerals, and nutrients in their nuts and seeds. They begin with nuts and seeds that are raw, premium, whole, and certified organic. They then hand sort, soak, rinse, and dry them at a low temperature, not exceeding 108° F, which preserves temperature-sensitive enzymes and nutrients. I have found these nuts to be sweeter, crunchier and much easier on the digestive system. Of course, if you’re so inclined you can soak and dry your raw almonds for a similar effect.
